The hype behind In-N-Out is real – and while we’re all for burger appreciation, their last Sydney pop-up in January saw people lining up for hours on end just to get a taste of the West Coast classic. It was a tad ludicrous, and Hashtag Burgers capitalised on the fanaticism by hosting a tribute to the American chain called the Down-N-Out, which saw 500 burgers fly out the door and stomached in two hours.
Now, Hashtag Burgers have announced that another pop-up tribute will be taking place – and it’s going for a little while longer. From June 8, the month-long burger jam is hitting the Sir John Young Hotel in the CBD – sitting between Plan B Small Club and World Square – which is currently being renovated. Speaking to Broadsheet, Hashtag co-founder Ben Kagan says “the Down-N-Out burger was our most popular burger [at Hashtag event Funk-N-Burgers]. We knew people were excited about the idea and we’ve been wanting to do it for a while now.” The project is in collaboration with Sebastien Cens, former head chef of Oxford Street pork lords, Mr. Crackles.
The extended tribute will feature items in the vein of In-N-Out’s most celebrated items. “The animal-style burger is a mustard-braised patty with caramelised onion and extra sauce. Protein style is no bun – there’s lettuce instead,” Kagan says. Also, vegetarians will be able to get in on the action with a meat-free item. “We want it to be a fake meat. We want to give vegetarians a meaty-style patty so they have a proper experience,” he continues.
